OK...I understand that VPC emulates a PC within OSX, but how do I go about install it?
Do I install VPC, and then it'll ask me to install a version of Windows? Do I need a special version of Windows, or will my Windows XP CDs do the trick?

I think you use your windows CD....(After) of course.
Yep, as above, instal Virtual PC, then install Windows or whatever from disks.

indeed but prepare for it to be very, very slow
you'd be best getting a hold of 98SE or 2k, to get the most out of it (NT4's pretty quick too).
So after installation, is it like dual boot? Or does Windows run in a OSX window (like a console)?
You run the Virtual PC app, and it comes up with a little window listing the installed OS's you have. Simply double click one to run it, and it opens in another window. I found that it got a bit annoying to switch back to OS X, if you get problems, hold down one of the three bottom left keys on the keyboard whilst moving the mouse pointer off of it to escape! I think it's the mac key but I don't own one so I can't say
