Quick and Easy Chicken Casserole


4 chicken breasts, cut into 2 cm cubes
2 cans thick vegetable soup
1 onion, cut into large dice
1 clove garlic, crushed
1 can sweetcorn, drained
1 tsp. Worcestershire Sauce


Place the chicken pieces in a bowl and toss them lightly with plain flour until they are evenly coated.

Warm a flame proof casserole dish over a medium flame then fry the chicken pieces with a little vegetable oil until they are lightly browned.

Add the onion and garlic and cook for a further two minutes.

Add the canned soup, sweetcorn and worcestershire sauce.

Cover with a tight fitting lid and bake in a the oven at 175 celsius for thirty minutes.

Serve piping hot with warm crusty bread or new potatoes

Alternatively, you can cook the whole casserole on the hob. Instead of putting it in the oven, just fit a lid on the pan, reduce the heat to a very low simmer and cook for the same amount of time.
