I now have a new TV which is connected to the Xbox 360 using the HDMI socket.
I want to connect the audio from the 360 into the hifi so that I have the video from the HDMI socket and the audio from the original AV socket.
Is this possible?

The AV cable supplied with the 360 is made in a stupid way and blocks the HDMI socket, I've got two and they are both the same, its impossible to connect an HDMI cable and the standard AV cable at the same time!
At the moment I've only got standard phono inputs on the hifi, the AV cable would connect to it if I could plug it in at the same time as the HDMI cable, but I can't

is what i did so i can use the optical lead. Not sure if you have optical in on your amp though.
Biscuit: The only audio out on the TV seems to be a headphone socket or through the SCART socket, I'm going to try the SCART socket later as I have a kit with all different connectors in it.

All I got was the AV cable with composite and component video plugs on the other end.
A friend told me to contact Microsoft to see if there is a cable available that will allow me to take audio from the big AV socket while having an HDMI cable connected, I haven't had time to check that yet.
It only has one scart socket and according to the manual it can output av through that, haven't had time to try it yet.
you can buy the optical out dongle from ebay etc comes free with an elite or use the old component cable and hack away the casing to clear your hdmi (my mate did this cause he's tight )
I've emailled Microsoft but they were useless, told me to check the FAQ and if that didn't help arrange for my Xbox to be repaired!!!
Like repairing an unbroken Xbox is going to fix the fact that they make crap cables.
As I've got two AV cables I'm seriously considering hacking the plug to bits, but I'm going to try the scart out from the TV first.
