Im into pretty much all manga / anime.

You ever see that movie black jack ? more story than any other manga i;ve seen... its like outbreak but with a strange sense of class and supernatural-ism (lol) but definately worth a view.

Metropolis and Princess Mononoke, whilst aimed at a slightly younger audience, are FANTASTIC. best films i own by a long shot.

Macross Plus (4 episodes are better than the movie, they are basically the same thing, but the episodes are just an uncut, better quality extended movie).
Appleseed isnt bad, as is X. Not great though.

Hikaru No Go is about a game called GO basically
A old pro at this game is transported into a young boys body where he lives among the boys conciousness. He urges to boy to lend him his body to play go, after a while the boy realises how much he likes the game and proceeds to play for himself. He has a rival named Touya Akira who is a very talented go player and is also very young......
WATCH IT!!!! it dont sounds like much but the character and plot development are like no other manga i have ever seen!!!!!!

Haven't seen Metropolis but I kinda fail to see how Ghost in the Shell was rated 15 when Princess Mononoke was rated PG. I mean.. they BLEW -that- head off its body! I'd say that Ghost in the Shell is a good Anime to start off with though. Some stuff can be really weird and may not make as good "intros" to the genre (e.g. Princess Mononoke and Akira are both a lot stranger in concept than Ghost in the Shell - which had some very interesting but odd concept already).

Perfect Blue is kinda weird, but the ending kinda reveals it all.

Evangelion is another strange one, but you really need to watch the series before going onto the two "concluding" movies (so it'll take a while to go through the whole series). The series start off kinda like a regular (if there is such a thing) mecha Anime. But half way, things start picking a very different tone.

EDIT: On a side note, keep in mind that the Matrix came out -way- after Ghost in the Shell. So either its coincidence, or the Matrix borrowed certain ideas from the Ghost in the Shell
