Copy the image as a layer and overlay on the original image. Select the bottom image and either convert it to B&W/mono or reduce the saturation until you're happy. Switch to the top image and erase the area around the subject that you want to keep in colour.
There is an even easier way. Simply convert to B&W then use the History brush to colour back in the bits you want.

i'd use the channel mixer as an adjustment layer and then use a layer mask for maximum control..
