Mentioned this in another thread. Hardware Unboxed did a video on 5000 series at difference res and said there's basically gonna be no difference at 1440p+. Account too new to post but it's called - Ryzen 5 5600X vs. Ryzen 7 5800X vs. Ryzen 9 5900X & 5950X: GPU Scaling Benchmark.

For purely gaming, the 5600x will do you fine as the price point in my opinion for the 5800x is not worth it, unless you're able to get it at a discount price online and require the extra cores.
