Basic Pancake Recipe

Makes 8 to 10 pancakes
Prep time: 30mins
Cooking time: 15 mins

125g plain flour
pinch of salt
2 medium egg
300ml milk


Sift the flour and salt into a bowl.

Add the egg and gradually beat in half the milk.

Add the remaining milk and beat until smooth.

Whisk with an electric beater until smooth then rest in the fridge for 30 mins.

Lightly oil a frying pan and place over a moderate heat.

Pour in just enough batter to cover the base of the pan.

Cook until the underside is golden, then turn and cook the other side.

Cool on a wire rack for use later and repeat with the remaining batter.

Caramel Banana Pancakes

Makes 6 pancakes
Prep time: 10 mins
Cooking time:5 mins

50g unsalted butter
50g soft brown sugar
3 large under ripe bananas, peeled and cut on a diagonal into 5cm pieces
142ml carton double cream
6 pancakes


Heat the butter in a heavy based frying pan, then add the sugar and cook stirring periodically until it dissolves and bubbles.

Add the bananas and cook until tender, then stir in the cream.

Cover the pancakes with clingfilm and heat in a microwave oven then divide between the plates.

Spoon the bananas into the pancake, fold over and drizzle the syrup from the pan on top.

Serve immediately.
