Has to be a guitar solo in an actual song, not just a guitar solo.
I quite like
Deep Purple - Child in time
Jimi Hendrix - All along the watchtower
Metallica - One

Pink Floyd - Mother, or pretty much any Pink floyd songs have awesome guitar solo's
Off the top of my head
'tallica - Master of puppets
chilli's - Californication (some question this but its the fact that he doesn't over play anything in it that makes it spot on for me)
Dire straits - Sultans of swing
Slayer - Angel of Death
The eagles - hotel california
plus anything by hendrix or srv
I reckon:
Judas Priest - Painkiller: two solos, both fabulous, and some awesome riffing in between.
Guns 'N Roses: Can't go wrong with Slash really, but the solo at the end of November Rain (where he walks out of the church in the middle of nowhere) is great, never has a guitar sounded so angry and hurt.
Bon Jovi- Damned: in the middle of one of the crappest albums ever comes a moment of pure guitar genius from Richie Sambora- I counted 11 notes in one second!
Fleetwood Mac- The Chain: for THE classic bass solo
Queen- Inuenndo(sp?): for the bit when Brian May plays the spanish guitar bit at full pelt Edit: Breakthru is wicked too- in fact whenever Brian May does his thing of playing harmonic tunes he freaking rules!!!

Think the riff is called "The Sanguine Article", it's in the song "The Sanguine Article" by Carcass.. really nice - could listen to it over and over.. I'd agree with Knox about Californication tho.. he could have so easily over done it, but instead plays with nice control

Agree with Knoxxeh - Hotel California is a defininitive guitar solo.
