But post quality doesn't necessarily weed out the spammers / spam bots, where was post count does. Generally someone isn't going to sit around for a few hundred posts and post normally, then suddenly start spamming..

No - but weeding out spammers (and post count pimpers - ie, those who post pretty pointless posts just to boost their post count) is one of the things the moderators do
