    If that's what you request, I'll do my best.

    I will say I'm not one of those uppity chef types who insist steak is ONLY rare or medium-rare... It has several options, with good reason. I personally prefer medium-well, with heavy seasoning, toasted edges if you're good enough.
    A good chef can cook. A great chef can cook however people require of him. None of this "ruining it" talk, or being outraged and refusing to acquiesce, like you're some fancy Frenchman with your own cooking programme...

    Everyone's threat model is different, I personally don't mind paying with cash, but would prefer not to be tracked by companies other than my bank.

    For me it depends on who 'they' are, if it was an advanced race of benign aliens who wanted to take me on an adventure then I'd be all for that, as long as they promise not to probe any of my orifices, if it was a pair of burly Russians with a penchant for soaring religious architecture then I'd be extremely worried.
