512MB is enough to run Aero on windows 7.
Anyone else remember when 2 GB was enough for 1080?
Considering I buy budget, 4GB for me. 2GB simply doesnt cut it anymore, GTA, Shadow of Mordor etc have shown that. 3GB of AMD may work for a while but really were looking at 4GB minimum and ideally 8GB now.
Until someone benchmarks a load of old cards to see how often higher memory options make sense it's really just speculation.
Under 10% extra cost I would probably go for the higher memory, over 20% extra cost I wouldn't and between that I'd consider it.

Not being a gamer the most i need the graphics to do is power a 4k display should i go up from a 2560 x 1440 which i have now.
Have opted for a shorter length GTX 960 which will fit my case and has 3 display ports which is my preffered output, and its quiet according to reviews. Whilst a 970 or an AMD 280 would have been better they are simply to long for my case and the AMD is a lot more power hungry and noisy.
It's an interesting question, but it's entirely related to the consoles.
Just a few months back, anything more than 1-2GB was excessive (limitations of 512MB consoles)
But now, we have the generation change to the next console level, so ~6GB will be approximate to the console level. (~8gb ram, but console ram is is shared so an approximate 2/6GB spilt is likely equivalent PC wise, short-term at least)
When I build a new system, I'll be aiming for a 4k monitor so probably a 4GB graphics card minimum.
Watch Dogs springs to mind. I'm not sure if it's been properly patched yet, but that had some serious memory issues at launch. The devs confirmed it's because it was originally coded/ported from consoles that have an 8gb pool of ram available to them. I was running out of memory and getting the game crashing on me with 8gb of ddr3 and a 7970 with 3gb of vram. The memory usage would build up over time, much like a program that suffers from a memory leak, and cause it to crash. People who had a gpu with a certain of vram (I can't remember how much) were not seeing these issues, because it was within the amount of ram that the graphics were allowed to have in the console version. This is a poor way to set the game up for pc, sure. But I don't expect this to be the last time we see this.
As for those saying "X amount of vram is enough" - you're probably not looking past your own scenarios a lot. People have all sorts of requirements that would cause them to need more vram than you might expect. And as I said before - I maxed out 3gb of vram years back just from modding skyrim on a single 1920x1080 monitor. Just think about that before you claim X amount is plenty...
