I prefer one, but it is also about space. I like having enough space for multiple windows. I use WindowPad to allow me to have custom splits. So I guess it feels a lot like the flexibility of multiple monitors with the option to merge back. I'd like to move to an ultrawide next, but right now the prices are pretty bad.

Two monitors is my preferred but I see a use for a 3rd at work...
at home I normally have a web browser or game on one monitor and youtube on the other.
at work I could have email on one database on another and connected to a customer's machine or a server on the 3rd.
I ran two monitor for a while and I love it. Now I'm on one because I want to save money on electricity among other things.
Personally, with the usage I have for my PC (web browsing, gaming) I am quite happy using a single monitor, and wouldn't get a second as I have no need for it (and no desk space for it either!). If I was doing more intensive work, then it'd be more useful. When I have dabbled with Blender in the past, I think it'd be very handy having a second monitor for following tutorials and the like, but I wouldn't want to game over two monitors, so that one 'pro' wouldn't be enough to justify it.
Although I have two 27" 1440p IPS panels connected, I usually only have one powered on.
I just don't have the use for the 2nd screen while coding or gaming.
I ran 3 monitors for many years, first 1080p then 1440p but I have moved to a single huge 4k and I really have come to like it better than the triple wide setup.
I prefer a single monitor since I don't have a lot of desk space.
I have used 2 monitors since the mid 90's, CRT's to start with, then progressed to a pair of Dell 24" 16:10 LED's. Recently added a third monitor, a 32" Benq but went for the 2560 * 1440 as my ageing eyes cannot cope with 4K. I prefer my monitors at natural resolution with no scaling. Just wish I could get a 32" 4:3 monitor 2560 * 1920.
I Use a LG Ultrawide as my main 34" and a Dell 24" as a secondary , Gaming general stuff on the ultrawide and emails and tv on the 24" Dell. Love it
Have 3 at home, most of the time they're just displaying static stuff or a video I'm watching. But when I'm working I need more!
When I was playing online poker full time, 2 x 1080p monitors (even QHD wasn't common then) was an absolute necessity. Very little of my 'workflow' these days though is computer-based and what little I do have is easily handled by my 14" / 1080p laptop. If I go back to computer work I imagine I'll get a curved ultrawide.
Got one 25" 1440p Dell ultrasharp and am happy for now (waiting on 4k HDR to go mainstream), wouldn't mind two or three curved monitors for immersive gaming
Have 2 16:9 23" at work but at at home have a 29" ultra wide. I much prefer my ultra wide set up.
