You do know that there are lots of different way to make fried rice. I quite like it with Jew's ear.

It doesn't really matter if your rice has been cooked the day before or right at the time that you intend to cook fried rice.
Rinsing rice.
1. Measure your rice, it doesn't matter if it's long grain or not, as long as you measure it right, it should cook fine. Rinse two times and how much rice you measured should be the same with the water.
2. After the rice is cooked, you just set it aside, let it cool for some minutes and then using a spatula loosen the rice a bit.
Frying Eggs
1. Before frying the rice, you got to fry the eggs first, three table spoons of cooking oil should do.
After frying the eggs. You can now fry the rice.
Frying Rice
1. Crush garlic and chop.
2. Heat pan, making sure that it is hot enough, then pour the cooking oil.
3. Mince garlic until golden brown.
4. Add the loosened rice.
5. Put a little salt, or if you like msg -whatever.
hi i have be trying to cook fried rice for some time now and i think i have just got it as good as the Chinese, to do this is the best tip you will ever need, right all you have do do is boil the rice as normal and then drain in a calender with hot water and then let it cool down for about haft a hour.you do not have to put it in the fridge which is a load of rubbish,now this is the best trick to make that perfect fried rice is to put the rice on a flat oven tray spreed out and put it in the oven on gas mark 170 or 150 to soke all the water out of it, keep turning the rice,you need the rice to go just fluffy keep watching it as you will see the stem coming of the rice.do not over cook the rice in the oven as it will go hard and you do not want that,when dun you can cook it in the wok. you have to do that with all foods that have to be boiled like noodles as well.when you get the rice perfect in the oven you will make that perfect fried rice trust me i no.all so do not cook the eggs with the rice and when cooking the rice in the wok put in a pinch of salt and sugar and put your light soy in as well.thanks that is it as i said when you get it right in the oven that is it man.trust me people try it you will be laughing at me when you try it.you can put the rice under the grill as well all so you can have the oven door open when you do the rice this should take about 3mins to 4mins for that fluffy rice.keep turning the rice every seconded do not put it to close to the heat as the rice will go hard on top.i am going to try it in tinfoil as well to get the water out of it which will be better i think as it wont get burnt buy the heat.i think i will do the chicken in tinfoil for 2mins as well as it has water in it.now i no how to get that lovey dried rice is to get the water out of it.trust me people put it in the oven spread out in tinfoil to get the water out of it when you do it you will love me when it comes out just like the Chinese as it is because the rice sokes up all the water.get the water out that is the best tip.this took me weeks to find out. people say how did you get that rice so dry and that is the tip dry it out in the oven.please people when you have finish draing the rice cover it in tinfoil and put it in the oven to get the water out of it you wont be disappointed trust me.

when you cook the rice just make sure that you dont add excessive amounts of water. american long grain and basmati rice are both fine. Best to let it cool to evaporate off the water then put it in the fridge over night. The next day you just have to break it up with a spatula.
Chinese people normally eats the rice freshly cooked and leftovers are fried so that you have a hot meal next day without wasting. It is best to use gas fired cooking stove and you want to keep turning it until the rice is nice and dry.

Gawd, I sure hope so.
Mine certainly improved after my first attempt at fried rice, the net result of which was a lot of mush in the bin, and cold milk and cereal for dinner that night.

I'll share an Indian technique.
Take 1/2 glass of rice and put it in a pot with 1/2 the pot filled with water. Let it boil , when it starts bubbling, check if the rice is still rock hard or has softened. Once the rice has softened, put a lid on the pot , take it to your sink and let the water pass through. Then, leave it back on the cooker for a few mins.
