Chips at home = salt and vinegar
'Chips' at McDonalds = BBQ sauce
Proper chippy chips = salt and LOTS of vinegar
Proper chippy chips in the North = salt and LOTS of vinegar and gravy too

When I first moved down south ('bout 4 years ago) I got some VERY strange looks from people working in chip shops when I asked them if they had any gravy...

usually have cheese AND gravy.. it's the perfect stumble-home-in-a-drunken-stupor snack... the gravy melts the cheese, which holds the chips in your wee polystyrene dish... magic and also very yummy

Salt normally and a bit of tomoto ketchup on the side

Tomoto ketchup with baked bean sauce is wrong!

i voted for vinegar- plenty of it and NO salt, cos it tastes like seawater and makes me wanna chunder. at work, i put garlic mayo and mild chilli on my chips during my break (well, my chip break, i tend to have many other breaks ), but at home and in the absence of beautiful kebab sauces, just vinegar does me fine.
