    Help with salmon steaks

I get by quite well with my cooking but I'm getting a bit bored of the same things. I've never bought fresh fish to cook before so I thought I'd try some salmon steaks. Unfortunately I couldn't think of what to do with them so I ended up putting them in the freezer but they're there waiting to be defrosted.

Could some one give me a recipe please? Maybe something a little spicey?

    Re: Help with salmon steaks

Steam for 8 minutes and pour a stir fry of veg and LOADS of ginger over them.

Make sure to use a touch of sesame oil in that final flurry.
    Cheers, David

    Re: Help with salmon steaks

    It isn't spicy, but the way I normally cook salmon steaks is;

Pre-heat a frying man to medium heat and add some groundnut oil. Put the salmon skin side down into some seasoned flour and pat off all the excess flour so that there is just a light dusting. Put the salmon skin side down into the pan and when it is cooked half way turn the pan out and turn the fish over. Put a small knob of butter in the pan and serve when cooked through.

    Re: Help with salmon steaks

put the salmon inside a well greased baking tray, on a bed of sliced onions, garlic, pepper corns, lots of olive oil, star anise, lemon, lemongrass and whatever you feel like, cover the tray in foil to keep the moisture in and bake till done!

    Re: Help with salmon steaks

Thank you all for your great suggestions. I'm not sure which one to do so I think I'm going to combine your ideas by pan frying the fish and serving it with the suggested veg with ginger (: wish me luck

cut up lots of onions, cover the salmon in fresh ground peppers
fry the onions until golden brown and put the coated salmon in the middle and cover. if you're like me let it fry till crispy golden. a little salt and voila!!

Salmon + a thin-ish layer of grated parmesan cheese on top in the oven. Sounds odd but is rather nice.

Add breadcrumbs and pesto to that and it's amazing!

Haven't tried pesto before but have used breadcrumbs with the parmesan - didn't think it added much other than texture. Might have to give that another go.

    Re: Help with salmon steaks

Here ya go....the best way to really enjoy Salmon steaks, courtesy of a Jamie Oliver recipe from along time ago.

    Need:

    Salmon Steaks (defrosted)
Black Olives (one jar of them)
Green Beans (one pack from the grocery section of supermarket)
    Cherry tomatoes (1pack)
    Olive Oil

Turn your oven on, and put it HOT (Gs Mk 8 or about 220'C ish)

Get a large oven tray, and make sure it's clean inside and use a tinfoil sheet in it.

Trim the green beans, top and tail and drop in a bowl
Drain the black olives and rinse them and drain again and drop in the bowl with the beans
Wash the cherry toms and drop in with the beans and olives.

Pour olive oil all over them, dont be shy with it, and mix with your hands

Pour all of this beans/olive/toms/oil mix into the oven dish AT ONE END, in a pile.

Take your salmon steaks, rub with your oily hands so they don't stick and put into the other end of the over dish.

You've now got vegetables one end, fish the other.

Put it in the oven, when that oven is HOT and leave for 8-10 minutes.

    And that is it

The olives and olive oil will go smoky, and that smoke will flavour the salmon at the other endof the tray, which will be cooked within 8-9 minutes. The toms will split and spread their juicyness.
The beans will be squeaky when you eat them, and it's all lovely.
Serve however you want , mounded up for people to grab from the centre, or on seperate plates

And chuck away the foil, no washing up

It is LOVELY, easy, and pure Jamie Oliver in his early years
