    challenge

    ok, i have some ingredients which i've just picked up in the supermarket during our weekly shop. My mum has challenged me to cook dinner one night this week. But i'm POOOOOOOOOO at cooking, so i'm gunna need a bit of help here! I'll tell you what i've got and if you can come up with some recipies (maybe slightly unusual?) it'd be great! Ok, here goes:

    lean mince beef
    onions
    mushrooms
    carrots
    chopped tomatoes
    red kidney beans
    lentles
    sweetcorn
    mini pitas

    Anything else i.e other veggies, pasta, rice, etc etc ate easy enough to buy on demand. Same goes for spices...

    So.. ideas people! Remember, easyish and slightly unusual!

    Oh! and it's to serve 2, so nothing to laaaarge!

    not very inventive but how about shepherds pie? (obviously without the kidney beans, lentils, pittas & add some potato for the top)

    burgers - use the mince, onions & some of the toms to make the burgers, use the pittas as buns & use some of the other items (sweetcorn, toms, carrot) as the basis for a salsa style topping

    Yeha! Ready-Steady-Cook-esque challenge.

    Maybe your best bet would be a Chilli Con Carne type dish as Laura suggested. Chuck in the kidney beans and lentils with the mince, onions, mushrooms and the sweetcorn. Serve with the pitta bread instead of tacos

    Health Warning: Due to the lentils, please do not light any naked flames in your house the day after you cook this. Copious gas formation 0_o

    Lentil and Sweetcorn Chowder (lentils, sweetcorn, onion)

    Kofta Kebabs with grilled mushrooms (Beef mince, mushrooms, onion)

    Marinated Carrot salad (carrot, onion)

    Refried beans (Kidney beans)

    Ok, so these need a coupla other ingredienst than you've listed, but you've probably got them somewhere.

    ooo, the kebabs sound good deck!

    i was thinking about chili too. Any chance of a reciepe for either of them (or both if u're feeling generous )

    Not got a recipe ready on file on file for either atm. I'll post them up here for you tomoz though..

    Can't do it tonight, sorry, I was up at 5am yesterday, still shattered now.

    ok, my mum's informed me that since i have all of today off, i've to not only make chili for dinner but also to make soup. The soup's a doddle cos i make that all the time, however there's so many chili recipies out there! Does anyone have a tried and tested tasty tasty one?
