Just gave this simple recipe a bash and it was pretty tasty....
Mix all of the following together:
Ball Mozzerella riped into wee bits
50g strong cheddar grated
Tbsp Dijon mustard
Slice chicken fillets down the middle and stuff with the mix
Wrap 2 slices of smoky bacon round the stuffed breasts so it holds them together
Season with some salt and pepper
Put on a baking tray and roast for 25 mins at 180C
Serve and enjoy
