    Lamb and mint. We've only recently gone back to eating (British, organic) meat, and got some sausages from Abel and Cole. The lamb and mint ones were just amazing.

    Pork & Sweet Chilli or Pork and Leek. Toulouse sausages are great, esp. with red onion marmalade. As an aside, I've got very fond of http://www.bbcgoodfood.com/recipes/1...d-thyme-batter , and generally use high meat content sausages instead of low fat.
