Got a freezer full of game. Duck, Pigeon & Pheasant breast, rabbit and venison. Trouble is I'm running out of ideas as to how to cook the stuff. Anybody got any nice recipe's for game?
I tend to use venison in preferance to beef, it (like most game) is terrible if over cooked. A simple but good combination I use is fillet of venison with stilton and mushrooms, venison gets a quick blast on a griddle then add mushrooms and stilton, then under the grill.
Pigeon breasts with either black pudding or chorizio works well with light salad. Could work well with pheasant.
Game pie (some of each), good place to use the rabbit

Cold venison with a layer of good mustard (or horseradish) in a sandwich is damned fine too. This is more of a left over tip, I know, but venison at mine tends to be as part of a roast or in a game pie.
