    Steaming veg...

    am I right in thinking that steaming, rather than boiling veg is better for you? cos tell ya what.. it makes em taste soooo much nicer...

    yes - but what i find nicer is to not cook them at all
    (i had raw veg with my turkey this xmas)

    less boiling = more vitamins if i recall.

    Yeah, most of the vitamin and minerals in veg are water soluble, so the less water you use, the more of those goody bits are retained... and flavour too!

    unless you make soup with the water... wouldn't the vitamins be retained then?

    (or gravy with veg water for that matter)

    yeah, some would, but other break down in water/heat so the quicker and dryer the cooking time, the better.

    As a rough rule, steam is very hot so cooks the veg quickly meaning less time for heat to break stuff down, plus it uses the minimum of water so there's less loss by dilution too.
