Vege version I do is all my own concoction
Sweat away onions, garlic and mushrooms for half an hour then add
Balsamic Vinegar - about 1tsp
Worcestershire Sauce
Dark Soy
Vegemite
French Mustard
Red Wine
stock or water
....and anything else that springs to mind
...reduce away for another 30 mins or so and sieve and squeeze. Add some pre mixed cornflower and water to give a coating to the back of a spoon.
It's all very slapdash and no precise measure and using whatever takes my fancy, sometimes it takes an hour sometimes 15 mins, but it always turns out superb.
