    Sauce for stirfry

    I don't like using the packets of chinese sauces you get from the likes of sharwoods etc. but i really don't know how you make chinese style sauces. any recipies?

    Not looking for anything complicated or time consuming, just something that will liven up a stirfry of baby sweetcorn, asparagus, mushrooms and bean sprouts

    No meat? if youre using meat, marinade in soy, rice vinegar, garlic, ginger and 5 spice for a couple of hours, throw it all (including the marinade) in the pan, then when its cooked slop a bit of warm water and a chinese oxo in there and you get quite a nice juice.

    Sweet and sour is also pretty easy, but not that fast, and i cant rightly remember the recipe (tomato puree, vinegar sugar and orange juice, but i havent got the quantities written anywhere, i just do it itill it tastes right)

    how about some sugar , light and dark soy sauce and a touch of rice wine ( or in finest kenhom style , you can use dry sherry )

    i eat a lot of meat when i'm offshore and when i eat out, so when i cook for myself i prefer to avoid meat. balances out in the end i think

    not a fan of sweet and sour, i always think of that pink or orange gloop you used to get from take aways with the chunk of pineapple at the bottom

    i'll try these suggestions out though, i think i could use the marinade without actually using it as a marinade.

    yeah, sweet chili is ok for dipping etc, but not as a main meal sauce IMHO anyway

    it works very well as if you put a slug of it in at the end of a stirfry

    I have a Nick recepie for a pasta salad of pasta , mayo sweetcorn and sweet chilli sauce which is very tasty

    Soy, lemon juice, a little honey, ginger, black pepper, some fresh red chilli.

    Play with the quantities a bit until you find what you like.

    SWEET AND SOUR SAUCE
    serves 2

    1 tbsp cornflour
    5 tbsp water
    2 tbsp tomato puree
    2 tbsp sugar
    1 tbsp soy sauce
    3 tbsp malt vinegar
    5 tbsp pineapple juice (can use orange juice but halve sugar)

    Heat together slowly.

    I'd say to use the pinapple chunks as well as the juice. And some crunchy carrot sticks for added texture
