    Cooling hotpot before freezing

    I have just made a sausage casserole and I want to know should I let it cool with the lid on or should I take it off? I have a vague feeling I've heard that it can get nasty if you cover it up.

    Letting it cool with the lid on is fine dude as far as i'm aware. Well I do it all the time

    I think some people prefer the lid off so that the condensation does not drip back into the food.

    Thanks for that. I decided on a compromise, I put the whole cooking pot (without a lid) into the microwave to cool off. Had some the next day....delicious - and I'm still alive! What was lefy I froze using the quick freeze botton and left that on for 30 mins. Is that enough do you think?
    I'll have a look around for recipes for one (or two which I can freeze of course)
