You will see the voltage requirement on the sticker on the RAM, set it as it says and it will work fine.

Most ram will work on auto settings these days but if you buy high performance ram then you may have to alter the voltage, as already mentioned, and the timings to get the rated optimum performance.
Do you have a reason for changing the spec of your RAM? It won't make any difference to the performance of your PC on its own. If you are thinking of overclocking the PC to get better performance, then that is a whole new ballgame and you will need to adjust BIOS settings to speed up various internal bus clock speeds.

My board sits default at 1.8V for DDR2 but my RAM is rated 2.1V so I had to increase BIOS setting with DDR2 Voltage [+0.3]. I have a Gigabyte board.
I thought 2.1v was the maximum it should be at?
Surely if it runs stable at less then that is fine?
If it runs stably with less voltage it is not only fine, but almost certainly running cooler and drawing less power.
You shouldn't need to touch the BIOS when changing memory, unless you've previously set the memory timings / speed manually, everything will be on Auto and will set itself
On the other hand, I have to echo peterb and ask why you are bothering to change your ram speed? If you're also increasing the amount and have found a good deal fair enough, but the change from 667MHz to 800MHz is very unlikely to give you any real world performance advance.
To answer your second question, if you *reduce* the voltage on your RAM it *should* reduce the power draw of the RAM (which will also make it run cooler). However, drop it too far and you won't be providing enough power, making the computer unstable.
