Yes, i believe the Audigy supports the 3 EAX standards but whether all three are implemented in the game of your choice is another matter.
3 presumably being the most advanced then descending numerically. Choose whichever one works best in game.
Oh and EAX is Creatives Environmental Audio standard. It's pretty good but not perfect.
Environmental Audio Xpansion makes games sound much better.....echoing caverns, and wild open spaces....all sound different....plus a certain degree of 3d postioning, so bullets coming from behind you SOUND like they are etc
The Game NORMALLY just offers you an option of HARDWARE SUPPORT for sound..and you choose YES
Audigy benefits from a HUGE amount of games that support it.....and it has its own processor so the CPU doesn't get hit for the effects....(much..there is a small allowance )
BUT....you gotta make sure your speakers are all wired right....
somewhere in the sound card control setup software is a Speaker test.....it'll play each speaker for ya....you position them for your own ear oles

Understanding it alittle better now.
EAX, as zak33 said, defines only environmental effects.
In order to get 5.1 in games, they need to either offer a specific 5.1 mode, or you need to enable an interpolated surround function in your sound card settings - Creative use CMSS, which is okay, but nothing to write home about. My card has a similar system called QMSS, which kicks booty.
5.1 in games is still a rarity, but with CMSS at least you'll get more of a feeling of being inside the action
It sounds funky in Battlefield Vietnam with my 5.1 creative and my DTT2500's... When I get round to it I really wanna hear it on my 3500's
Please do not message me about Scan Free shipping, I no longer work for HEXUS.net

EAX 1 and 2 both provide the ability to render environmental sound effects. E.g. You're in a corridor, and a clang at the end of the corridor is heard. The EAX engine will make a standard clang noise echo like it was in a corridor.
EAX 3 allows multiple environmental effects. E.g. With EAX 1 and 2, if you were in a hallway at the end of a corridor, and the clang noise was heard from inside the corridor, the EAX engine could only give you the sound as if it was in the room you were currently in (i.e. in a hall). This is because it cannot generate multiple effects (sounds may be coming from your room too) simultaneously. With EAX 3, you can hear noises from the corridor as if they are from the corridor whilst hearing your character speak in the current room, and hear someone shout from the cave entrance next to you!
Hopefully you get the idea now.
EAX 3 is also known as EAX Advanced HD.
There is EAX 4 and 5 for Audigy 2s, but I don't know what they bring to the party.
So in conclusion, use EAX3 as much as pos.
