afraid it doesnt allow me to update - doesnt seem to be compatible with my OS - windows 7 even though it says that it is for the windows 7 64 bit version!

Yeah it sounds like you need a BIOS update. It doesn't matter what OS you're using - what is the make/model of the motherboard?

When I double click the .bat file, it says that it is not compatible with 64 bit versions of Windows even though I selected 64 bit. I think Sapphire has screwed up - I really wish I got a Gigabyte one!

OK, the big question - do you have a floppy drive? If not this could get complex.
It would appear that Sapphire haven't implemented an EZFlash type technology (this allows updating the BIOS from within the BIOS - voodooish or what!), so you'll need to boot into a DOS environment and run the update. The usual (well, old school) way of doing this is to boot your PC off a floppy disk with a minimal DOS environment.
If you don't have a floppy drive you'll have to look at doing this from a bootable CD (or a USB drive, but given that one of the BIOS enhancements since yours is to make USB drives bootable I don't think that'll work for you!). http://www.bootdisk.com/ have some suitable instructions (see the "Bootable CD" header about 1/4 of the way down), but a google search (flash BIOS from CD or Bootable DOS CD would be god starting points) should produce other options.
Alternatively, Windows 7 might have it's own built in program for making bootable disks (earlier versions certainly allowed you to create boot floppies) but I've not looked into that...
EDIT: it would also be worth looking at http://www.nu2.nu/bootcd/#clean which has useful step-by-step instructions and freeware packages specifically designed for updating your BIOS from a clean boot CD-ROM

Find a spare USB flash drive or just use one you already have after moving your stuff off it and formatting. Then, extract the USB format zip and run the exe 'HPUSBFW.EXE' with admin privileges (right click - run as admin) then select your USB drive in the dropdown menu, set the filesystem to FAT32 and put a tick in quick format and Create a DOS startup disk. 'Use the files located at' should point towards the 'DOS Files' folder which was included in the zip archive then press start. The flash drive is now bootable. Then, from the other zip archive, the one with the BIOS files, copy over everything to the root of the flash drive and reboot your system. Make sure you boot from the flash drive, there should be a button to press, often F8 or something, to select boot device. When you arrive at a command prompt type flash.bat and press enter.
After completing the flash you'll probably want to do a normal format of the flash drive to make it non-bootable before copying everything back.
Ah, I misread the page: the linky watercooled has done here will make a nice bootable USB stick so you don't have to mess around burning CDs (I misread it as being a BIOS update to allow booting off USB drives - doh!). Then again, if this doesn't work at least you know you have another option!
