not playing games? then a 785g motherboard, hard drive to your taste (Western Digital or Samsung are general recomendations) decent 400-450w psu, 120mm fan based tower cooler, sata DVDrw, case to taste, as much ram as you can afford.

I would suggest getting a Samsung F3 1TB but I assume if you are doing HD video encoding you would be looking at some sort of RAID setup??

IIRC,with an HD4350 or HD5450 you can enable SurroundView which means you could run upto 4 monitors with the IGP.
Alternatively you could use a VGA-DVI converter for the IGP so you could connect one of your DVI monitors.
