Yes EAC is a little more "techy" than the rest, and yes it does take a little longer than the rest, but you can't rush music decoding.

The Lame codec makes a great job of copying CD to mp3, and whatever program uses it makes a good job of doing so... maybe EAC does a minimally better job than CDEX, but at 256 avg VBR, there is nowhere near enough difference to even notice without careful 1 on 1 studying on multiple occasions... it is really unnoticeable, and the quicker encoding time makes up for it by far IMHO. CDEX is the better programmed option, quicker and simpler to use, with unnoticeable loss in sound quality
