    sudo apt-get upgrade

    Is it worth doing this on my Ubuntu fileserver if everything is working 100% perfectly? Is there a chance that a new version of something could break something?

    It wants to make some big changes...

    Yes it is. There are new vulnerabilities being discovered in *nix software as in the various versions of Windows, so it is always worth upgrading.

    Yes there is a risk that something might break, although (<sweeping generalisaition mode>) Linux developers are pretty good at regression testing (</sweeping generalisation made>) but that is a risk you run with most software upgrades.

    New releases often introduce new features or correct previous incompatabilities (as well as fixing sy vulnerabilities) so yes - upgrade.

    "upgrade" on a stable release contains ONLY bug and security fixes.

    It does NOT change your distro to a later version. Therefore risk of regressions is low.
