Programmes loading on start up

How do you stop programmes loading on start up?
I've set Mail and Safari up in this way but can't remember how to change it.

System Preferences in the Dock
Under System, click Accounts, then Login Items. The + and - icons will add and remove items

Or even easier right click on icon in dock and click on open at login which should be ticked
