I've been looking at VW Golf GTI Mk2 so far.
Presumably if it's old enough I can have it on Classic insurance which would be cheap?

Mk1 Toyota MR2 (but watch out for rusty sills and arches)
Peugeot 205 GTi (or CTi- I nearly bought a CTi for £500 a couple of months ago)
Citroen ZX - either a petrol Furio or a Turbo Diesel
Mk1 Renault Clio 16V
BMW 318is (probably a good one will be a bit more than £500, but you never know), or 320/325.
There are lots of late 80s/early 90s hot hatches/ small 'exec' saloons around for peanuts, so it's just a case of finding one with a little bit of life left in it. Certainly later stuff like the Clio shouldn't rust (my mum's has had bare metal showing for about 2 years where my brother crunched the wheelarch- so it must have been properly galvanised).
ZX Volcane Petrol /Diesel was the one to go for
Could also look at Renault 19 16v's - the Chamade (saloon ) was a little cracker.

A Nissan 200sx S13 thats all rusty and has an engine knock. It'll not last long but it'll be a hell of a lot of fun till it goes bang and falls apart.

I would recommend a fiesta... the SI are fun and imo look awesome (mine currently going for a very dark muddy unwashed stealthy look... like something out of carmegeddon - just without the spikes).... BUT they rust, and not particually fast to start with. I know a few people that have put 2l engines in them and very impressed by it... BUT you wont find a 2L in good condition and the SI model is getting rare... and the people doing it have faaaaaaar too much money to waste on what is a very low value-almost-at-the-breakers piece of rust.
sooo.... for me it would be a mr2.. RWD fun or a 306 for the anti rust.. the 205 might be fast but it looks like it has been glued together with faeces.

R19 16v without a doubt. You can pick them up for about 200 quid, and they're a super drivers car.
Clio 16v's are possible for that money, but they'll be phase 1's and absolute nails.
Show me to the £500 GTi Mk2 not held together by rust!
