The scart cable is far preferable to composite. Leaving it disconnected is preferable to composite

I always thought s-video was worse than scart. I would stick with scart unless you have component.
Scart is a 21-pin connector, capable of carrying 3 types of video signal:
- Composite
- S-Video
- RGB
The best signal you can send through SCART is RGB, but this requires a special SCART socket at the other end (typically, a TV will have 1 RGB-SCART socket and the rest will be inferior sockets)
Generally speaking, the list of picture quality goes like this (worst to best)
- RF Modulator (Ariel socket)
- Composite (SCART or yellow RCA socket)
- S-Video (SCART or black mini-DIN socket)
- RGB (SCART)
- Component (3x RCA socket)
