My monitor only has a VGA connection but I have a HDMI-VGA adapter, is it as easy as that or do you need a special adapter of some kind? Is it even possible?

HDMI is digital. VGA is analogue.
Unless the "converter" has a fully blown DAC system (digital to analogue converter) then it won't work. Can you link the item and we can tell you more?
edit - forget it anyway, the PS3 forces HDCP over HDMI, which an analogue signal can't carry. It wont work, sorry.
May I suggest a simple solution to connect your PS3 to your lcd monitor through VGA?
