How can she type a txt every min or is she sending them in bulk? E.g 1 text to about 20-30 people at a time ?
The large bills were the result of AT&T itemising every data transaction, even the administrative ones which weren't billed. The sheets were full of tiny data transactions costing $0.00.
afaik from reading about the iphone, you can keep texts going like an instant messaging program. so that may explain some of it.

She clearly had no idea what she was talking about. 30000-35000 texts in a month is not even close to being realistic... 3000-3500 would be sensible for a big texter....
