That is quite similar to what I normally do with notes taking in lecture just a more complicated level.
Although I don't see the reason of using excel instead of word, apart from the fact that word have grid snapping but that could be turned off, when it is harder to drag select the vector graphics in excel than in word.

Probably just for illustration purpose. Both Word and Excel are mentioned in the preface. The only criticism I can come with, is the use company time for presumably what he is not paid to do: the explanation given for not using free software is because they are not installed on company PC and firewall prevents downloads. Still, it's also possible that this video wasn't shot in one sitting and merely done during breaks. And to be honest, I don't care - (s)he is the one taking any risk (if any), and I still think the whole thing is impressive.
I wonder how long it actually took, the video is playing at quite a fast rate (if that's how you explain it)
