Pretty sure it could, I've SSH'd to my server before from my iPod...bit of a pain to type on though, but its do-able for sure!

Yep, as i said - the only thing that runs in the background is the operating system itself. And it's pretty efficient as you can see. Of course if you're running itunes on top of mail you're running two things, but it's negligible.
Anti virus on an ipod? No more than you might need anti-virus on a Blackberry. There have been relatively few viruses for the iPod and the only one that bricked it was a result of Jailbreaking if i remember right. Firstly a background process wouldn't be able to run - the OS is specifically designed so that one thing happens at a time. Second, it'd be a lot of effort to make a virus for iPods mainly because they're so easy to restore. Viruses will also exploit holes in the webmail app that opens them. If it's a rogue attachment then it's highly unlikely that Mail for iPod would actually be able to open it, let alone the virus be understood by the operating system.
Your iPod should be backed up every time you connect it to your computer, including all the data on it. If you get a virus, just do a restore.
got my ipod touch free with macbook pro as part of student deal and man this thing is really well made, the app store is partly overatted as most of the good apps are pay for... and it adds up cost wise, however most apps are well made simple as.
The one problem i had with google maps is obv outside of wireless zone you have no internet as its not a iphone.... and you lose the map then so no using it for directions on the move.
But the ipod touch is a few things in one... amazing video player... awesome mp3 player... great applications... good game console... etc.
main faults in my mind are really Itunes being what it is... and the second is battery life... the ipod touch has a serious discharge rate when not in use and also uses alot of power as it is... if i take the ipod out with me it will be dead by end of day even if not used all time.
and about anti virus as said above jailbreaking iphones are most likely to get viruses... and because its based on Osx you probably know how likely it is to get a virus....

I bought one of these yesterday, the 32GB version (I went for higher capacity as it's meant to have a bit of a faster CPU and GPU - not sure about the GPU though) and well, I am absolutely chuffed with it too, all the places I am generally at have Wi-Fi too, apart from work, so I'm pretty set with connectivity!
Get a games called 'Trenches' good bit of fun! And I'd imagine it might be your pot of tea!
