Steven Erikson - turns out he's a friend of Stephen Donaldson (who is currently writing the third Covenant books!) and the "Tales of the Malazan Book of the Fallen" series. Standout for me at the moment.
Katherine Kerr (or Katharine, never can remember) - she's up to 11 or 12 of a 12 or 13 part cycle (Deverry Cycle). Very good, lots of...reincarnation makes things messy.
And all the other stuff mentioned I find Eddings and Brooks a bit repetitive now, nothing new, but if that's what you like go for it. Ditto Terry Goodkind really.
Nobody mentioned Douglas Adams??
Tad Williams set of four...Of Memory, Sorrow and Thorn or something I think. Very good.

Wheel of Time series is immense for the first few books.... Havent read it in a while (on book 8/9) but it gets quite "political" (in my opinion) in the last couple I have read i.e. not much action.
Sword of Truth is much the same kind of thing and there is another serires I forget the name of but the first books is called "The Baker Boy" IIRC.

Of course I assumed everyone would realise I had automatically taken it for granted I have read and love the books by the late, great Douglas Adams (no relation).
(Even if he was peverse enough to like using Macs )
The Wheel of Time series have got a lot of people tired now, as it moved away, as you say Richie, from pure action to more "intrigue" - but as I loved the Empire series by Raymond E. Feist that stuff appeals to me.
Baker's Boy is the first book in the Book of Words trilogy by J.V. Jones - that was a "nice surprise" purchase as I'd never read anything from that author before.

I think TWOT books lost it around the same time a certain character was supposedly crushed by a falling wall (trying not to ruin it). from then on its moved away from the action bits which is sad as they were really good
I'll second the other recommendations all of which are good. From a modern sci-fi perspective then I'd suggest the following as a starting point for some of my favourite authors in this genre;
Naked God Trilogy - Peter F Hamilton
Snowcrash - Neal Stephenson
Altered Carbon / Broken Angels - Richard K. Morgan

Baker's Boy was JV Jones' first book, hence not having read her stuff before! She was nice enough to send me signed bookplates and a signed piccy one
Pern books by Anne McCaffrey - definately agree, very good, especially the prequel one "Dragonsdawn" in my opinion.
