It's not a good fit for everyone, but I'd suggest at least trying Spideroak. I've been using them for a couple of years and it works for me. The download speeds aren't anywhere near what you get from Dropbox, but they're taking their security seriously at least.
That said: nothing goes up to the cloud without being encrypted first.
How's your experience been with client stability with Spideroak? As I mentioned earlier, I tried it a while back but it was crashing fairly frequently, so I gave up with a view to trying it again down the line.
any recommendations for programs that can encrypt?
Was running it on a Server 2008R2 box for almost 2 years with one notable crash (which was down to low disk space on the system volume, so I'm not really putting this down to Spideroak), and none whatsoever since moving to Server 2012. The upgrades aren't particularly clean, and I've found that I almost always need to uninstall/reinstall if I need to upgrade the client but it's rare that I do so.
As for encryption: Truecrypt costs nothing and does the job perfectly well.
what should i use instead of dropbox?
i use it for some private important stuff!
I've been using SPiderOak as well for a couple of years. Their client app is not the prettiest, but it does work. I have no crashes (Win 7 64 bit). I have about 100GB of storage.
I also use SpiderOak for on-the-fly sync'ing between my PC and wife's laptop at home, which is a very nice thing to have.
The main reason I use them is that they take YOUR security very seriously.
is there a dropb box type server i can install and run on my own linux server that i can use with a nice client UI ?
Firstly, encrypt anything you store on a cloud service, encrypt it very well if it is sensitive or important.
If you just want a simple system that behaves like dropbox, which is effortless, more secure but still stored on a cloud system, I like SkyDrive, also because it handles office documents really well.

Not quite sure what you are after, but SAMBA server gives you access to your server using windows explorer, you just need to set it up and forward the appropriate ports on your router.
Alternatively you could use SSH/SFTP using Directory OPUS and Putty to give you windows support - Putty is open source, but you would have to buy Directory OPUS.

My broadband speed - 750 Meganibbles/minute
It's been over 2 years since this thread, I think that a bunch of new services has popped up since then (and others changing for better or worse). Has anyone changed / tried any new services and found them to work well? I noticed that some service offer end-to-end encryption, which is pretty convenient. At the moment I am looking at Mega. They offer a generous storage capacity on a free account (50GB) and end-to-end encryption. But I don't know how stable / reliable it is, and of course, with most competitor offering nowhere that level of storage, I am also concerned whether their business is sustainable.
I'm building my own NAS box... not interested in paying for a cloud backup option for my digital stuff.
I use OneDrive and Google Drive for bits I can't do without, all other media is backed up multiple times on scavenged HDDs from family and friend's old computers. I have a few terabytes of storage capacity and don't use half of it.
I have never faced issue with DropBox yet. In fact this is most convenient across all platforms.
Other than keeping control of your data, is there any feature that makes Owncloud stand than commercial solutions? To be honest, I am not in a fiddling mood, something that work similar to Dropbox but with end-to-end encryption and more storage of start off (without having to refer a dozen friends) and affordable upgrade will do. Generally I use those services mainly to send myself documents from one system to another (e.g. PC to phone), though occasionally I also use it to share photos with selected friends.
