Might make a difference at very high resolutions but I'd say it's probably just an e-peen thing. If this card is smaller, combined with lower power draw/noise it might be a good buy though, if the price is right.

you need that sort of memory for high res gaming, especially if you want to bump up AA - 2 of these in SLI are enormously more powerful and, more importantly, cheaper than the single card alternative
There is a market for this in gaming, albeit an extremely small one for high VRAM cards, namely multi-monitor gaming. It's discussed here at resolutions of 4800x2560.
There's also a GTX 560 Ti card with 2GB instead of 1GB. I'm not sure any of these cards yield better performance over their standard counterparts but at least they provide bragging rights for those who buy them.
