Used to be 12 (2 on the gpu) in an old thermaltake mozart tx case ..... upgraded to a newer corsair r110 and it's now 8 including the 2 on the gpu.
I have to say that my old case was so much better than the corsair temp wise and sound wise also and would still use it now if it wasn't the size of a vending machine.

2 x 140mm on the radiator (pushing air out), 4 120mm in the case (3 front pulling air in, 1 rear pushing air out) and 2 on the GPU. So 8 in total, all work at varying speeds depending on temperatures on the GPU / CPU.
Edit: I see everyone is counting the PSU fan, however I'm still not going to as it generally runs at 0 RPM.

I have 11, but I have cut down on a couple and my GPU does not have any fans.
I think a previous build had as many as 16, at one point, but then I went to watercooling and didn't need so many.

Three attached internally to the case: front bringing air in, rear and top expelling air. Then two on the graphics card, don't know which way they're blowing, and one on the power supply which is extracting from the case.
So, apologies, that's a total of six.

yet loudest thing in there is the HDD (4 of them)
2x 200mm case intake.
2x 200mm case exhaust.
8x 140mm (push/pull) on my two 280mm rads which are in a windowsill mounted rad box.
1x PSU fan which only spins up at 60% PSU load and never does as I can't get anywhere near that much load.
All fans are running slow (200mm at 480rpm, 140mm at 780rpm) so it's a very quiet setup while still shifting lots of air.
2 x 140 mm front intake (Noctua, Lian Li)
1 x 120 mm rear exhaust (Noctua)
1 x 120 mm CPU cooler (Noctua)
1 x PSU fan (whoever Seasonic used)
3 x GPU fans (whoever Asus used)
8 total.
2 fans, both on the graphics card.
