A couple of variations that haven't been mentioned:

Black pudding with salad cream. Bliss!

And Curry on toast is fantastic hangover food (using a saved half of the curry from the night before).

Although one sandwhich that seems wrong and clearly IS wrong, is my Dad's favourite of Beef dripping on toast, laced with sea salt.

One of my favourites has to be Coleslaw and crisp sarnies.

I'm not (quite) that big a hypocrite, but seeing as you asked so nicely ......

I like an occasional subway, but I have to agree with Zak, they might be presented as fresh, healthy and wholesome, but some testing that has been done has shown that the actual contents can be very shocking.

For a shop sandwich, I also agree with Zak about Waitrose. But mostly, I agree about building your own, with proper ingredients.

What I don't agree with is the sandwich in the OP. Not a cabbage fan at all, though I 'pose it adds crunch. Nah, if it's gonna be a cheese sandwich, then for me I start with a nice cheddar (and I like Cathedral City), grate it (must be grated, not sliced), shredded lettuce and about half a fresh, chopped tomato. Oh, and malted wholemeal, with a hint of salt (low sodium salt) on the tomato).

Re: A sandwich that seems wrong but just works

    My usual is from one of the brilliant sandwich places in Canterbury and it consists of;

    Mini Baguette
    Butter
    Mayonnaise
    Brie
    Bacon
    Chicken
    Lettuce
and finally a few sliced up grapes

Its a bit of a mouth full but, very, very, nice indeed

Re: A sandwich that seems wrong but just works

    OK, here's another lovely creation.

    Multiseed tortilla wrap.
    One slice of leerdammer
Once slice of Tesco Finest rump roast beef
    some wholegrain mustard
a few black olives sliced up
some chopped up sundried tomatoes in oil

fold together and grill in a George Forman

    Lovely!

Any sandwich, whatever concoction or configuration you can imagine, is all the more better when garnished with a healthy handful of crisps

Yes I definately agree with the crisps thing! esp cheese and onion crisps in a chicken salad sandwich. I made a sandwich out of spicy chicken bites and toasted cheese the other day, which was nice if a bit weird. Also marmite and olives are nice additions to sandwiches.
