I like my steaks rare so this may help you.

First of all - buy a good steak. From a butchers - definately not somewhere like Tesco. I like to oil the steak and rub some salt in.

I use a grill pan. Add a little oil and heat it until its *really* hot. Then cook it for a couple of minutes on each side until (as I think someone else said) until its cooked halfway up the edge. Then turn it over and do the other side.

MOST IMPORTANTLY though. Let your steak rest after you cook it. Leave it for about a minute or two and the juices will settle back in the meat. Mmm, lovely.

I went to Mexico a few months ago and there was a really good Argentinian style steak house there. I must say they did the best steaks I have ever tasted there - they were sublime. And huge!
