    But how come you guys know so much about Asian food culture? I am Japanese but to be honest I didn't know Uwajimaya Shoyu until now I feel ashamed of myself! Anyway, I'm looking forward to make proper fried rice tommorow. Wish me luck.

    well, asian food does tend to taste better than western food, and I think it is healthier..

    I just skimmed the thread so someone may have already said this, but use
    day old rice that will help a lot. Kikkoman is carp as its made in the
    netherlands I think, but then again its better than the amoy stuff. The
    only other soy sauce you can commonly get would be tamari made by sanchi,
    I've seen this in the free from section in tesco. But also may not be suitable
    as its more for dipping.

    Seeing as you are in london just go to Japan Centre or Arigatou for more
    decent soy sauce.

    kikkoman is japanese anyway, and IMO fried rice is a chinese thing..

    I would never use soy sauce in egg fried rice . It'll just complete destroy the balance of the taste !!! The main thing about Chinese cooking is to get the balance right . The taste of soy sauce is just too over powering in egg fried rice . I think lots of people just assume that every chinese dish has to got soy sauce in it . Well that is just not true.

    I think fried rice is a pretty common thing throughout east asia. I would google
    yakimeshi for japanese fried rice recipes. Korean recipes would also be worth
    trying too.

    Thanks to all your advice I made my best ever fried rice the other night and all my friends who ate that seem very impressed by the new taste so I'm very happy! Still not perfect but much much better and as I've tried this method I came up with another idea so I'll try that out next time

    You make Gyoza? lol, that's cool. Is it Chinese style with ginger or Japanese style with lots of garlic? And have you tried Korean Gyoza? It's sort of hybrid between these two but the sauce is unique and it's very nice.

    Yeah, I agree Soya sauce sometimes destroy the taste because of it's strong flavour(especially Chinese one) so I try not to pour it over rice directly but pour it through the edge of the frying pan so that most of them immidiately dry out leaving only a good fragrance. But as a Japanese I love Soya sauce and I put it in almost everything I especially fond of Chinese one these days, they have much stronger shoyu flavour compared with Japanese one.

    Thanks for the info KUMAGORO-san, I'll check those places up whenever I have chance to visit West End next time. Domo-arigato-gozaimasu.

    But make sure you re-cook the rice properly, as undercooked day old rice can kill ya....real breeding ground for all sorts of nasty bacteria so I'm told.

    the difference betwen using soy sauce and salt is:

    soy sauce for smell and taste where as salt is used to make things salty.

    I like to marinade sliced chicken in a little soy, fresh ginger, garlic and a little dry sherry but i would'nt add the marinade to the stir fry as i agree it would be too overpowering ! Spring onion, a little chopped pepper and one of my fave dishes !! I like to use peanut oil too for extra flavour !
