Yes, but the total disk size will be based on the smallest hard drive.
ie. Two hard disks, 40GB and 80GB.
Raid 0 : Total disk space will be 80GB.
Raid 1 : Total disk space will be 40GB.
It is best to use identical hard drives for raid setups.

I believe some RAID controllers will now allow you to make use of the unused 40GB on the 80GB drive in the above example, albeit as a standalone drive outside of the raid 0/1 array.
