Server consolidation can work quite well , especially if you assume that your servers aren't going to be busy all the time.
Some services virtualise better than others though.
Have you considered backup requirements ?

I believe this is just a very over complex solution to simple setup

Having given it some more thought, I agree, this is probably not the environment for this kind of setup.
Just thought it might be a fun thing to try.
fun things are good , just not for production environments
by all means get yourself a copy of VMWare server ( which is free at the moment IIRC ) and some Beta / Evaluation CD's and have a play
