I have been testing a couple of different workouts to specifically get my shoulder's ripped? The role lift and dead weight isn't really doing anything for me, does anyone suggest any lift in particular for me to build up my shoulders?

To get your shoulders "ripped", you have to lift and be on a decent diet. You cant bulk and rip your shoulders, it's either get them ripped or bulk them up. I do 3 lifts on them.
Shoulder Dumbell Press OR Military Press
Arnold Press
Lateral Raises
I do 5 x 7 - But many do 3 x 12.
Shoulder dumbell and Arnold presses..... if you do lateral raises keep your arms slightly bent and don't go higher than your shoulders.
Remember though that if you don't have the right genetics you might not get them as big as you'd like!
Whatevver you do, avoid upright rows and press behind neck mate.
low reps and heavy weights add more size generally, but shoulders are a smaller muscle group so they wont bulk up as quickly as legs or triceps might, it takes time, and dont over do it as they can be injured more easily as they are a more mobile joint.
you're best bet is to keep lifting normally, but making sure you dont skimp on areas you want to improve upon!

Technique is everything. Find the bloke with the most stupidly large neck, ask him to help.

Wouldn't necessarily agree with that.
Low reps improve neuromuscular efficiency, the hook up between the muscle and central nervous system improves increasing strength to a degree, and a certain degree of mass.
However, mid range reps tend to make a greater inroad into functional ability. More glycogen is depleted, and more lactic acid generated. Hence there is greater micro trauma to the fast twitch fibres and greater growth.
For definition... diet.
