Just checked mine, all ports on the back are open and I can use the HD component cable or the HDMI and its the 60GB Premium. I would take it back and replace it as it should have all ports open.
Just to check, yours isn't the arcade is it with the 60GB Drive added afterwards as I think the arcade only comes with one of the ports from memory and its normally the HDMI port thats left off.
See here - http://www.amazon.co.uk/Xbox-Arcade-.../dp/B000XPED00. The Arcade version comes with the HDMI port. As I said earlier, it sounds as if you've got a 360 where the faceplate hasn't been cut properly. Take it back and get a replacement.

Yes, it certainly sounds like the back plate has not been punched out correctly. I would take it back if I was you.
