NOT if they've come from a responsible breeder. (Sorry for banging on about this again) If you do that they have been handled from Day 0. The two (hopefully soon to be 3) litters of whom I own the daddy have been handled from the first few hours after birth. They get used to different people, being handled and played with and usually bond better with other rats as well, as handling them cuases mommy to groom and fuss over them more when they are returned.
My first two boys were pet shop rats and it took a good 3-4 weeks before I could even pick them up let alone play with them. I never got bitten though - nipped. You can tell the difference.
If I poke my fingers through the bars of the cage I'll get bitten - but that's because it's their space and I have to respect that. They know the difference between the bars and the doors.
My lads, if grumpy, have once or twice given warning nips if I've played with them too roughly or if I've surprused them. But they have never broken the skin.
And yes bright orange - official variety names are Silver Fawn and Cinnamon, oh and Topaz. I have a friend who has recently started up her rattery specialising in these - she loves orange ratties
