In that case the first thing to do is get that BIOS updated - I'd be tempted to go with the latest version, but FB at least should help with RAM compatibility.
Personally I'd use Q-Flash, too many horror stories of Windows based BIOS flashes...
Dump the new BIOS on a USB key, reboot the machine and press the END key to go into Q-Flash. The rest should be in the manual
It's the Gigabyte built in BIOS flashing tool - it's an option when you start your machine up.

When you say Windows shows 6GB installed but xGB usable, where are you getting the "usable" figure from?
If I'm going to the hassle of flashing a BIOS I'll generally go to the most recent unless I have a very good reason not to (ie known incompatibilities). You may also find that the newer BIOS has more options, such as a memory hole/remap kinda thing
