Call of duty World at war is by far the most fun co - op out there for PC atm..
Oh and also Gears of war.. its freaking awesome..
Oh oh, and Red Alert 3 has co-op aswell..
that's pretty much all of the i reckon.
Oh yeah.. edited coz i forgot about Left for dead being amazing too for co-op although extremely short.

Another recommendation for Gears of War 2. Managed to convince the missus to play it (hard enough to convince her to play Guitar Hero) and she LOVED it. The 2nd campaign is better than the first in that its a lot more immersive, it's a great one to play co-op, much more enjoyable than playing alone where your ally's AI sucks.
I haven't played it, but Left 4 Dead sounds like an awesome co-op experience too, like it was built for that.
A selection of games i loved doing coop on the 360 with are:
Gears 1

Rainbow Six Vegas 2
Army of two
Saints row 2( this game is supposedly the best coop game out for the 360 according to IGN and N4G)
CoD WaW
Resident Evil 5 demo was great so full game is a definite for most coop enthusiasts
Halo 3
Left 4 Dead was my favourite though , I highly recommend !
One more for Gears 2 co-op. Its awesome, was playing it thru with a mate and we couldn't put it down..

Haven't reli played much more co-op, but agree with a few others that say left for dead 4 looks pretty cool and also new resi evil 5 game looks awesome or co-op. Waiting for fear2 soon tho, played demo and enjoyed it but unsure if this is co-op??
Another vote for GOW2 - I played the whole thing through in Co-op over a couple of days and it's far better than playing solo.
Also, Left 4 Dead. I think you really need 4 players though - I've only played co-op on PC at a LAN party but it's absolutely brilliant, particularly after dark!
